Hangzhou cuisine emphasizes the freshness of materials, elaboration of processing and naturalness of flavor and places importance on color, smell, taste and shape. Chinese cuisine was always accompanied with Chinese traditional stories and legendary which are well-known at home and abroad.
The typical dishes of the cuisine are: West Lake Fish in Vinegar Gravy, Dongpo Pork, Beggar's Chicken, Longjing Shrimp, Aunt Song's Fish Soup and West Lake Water Shield Soup. Reminiscent of the romantic scenery around Hangzhou, these dishes are delicate, tender, refreshing and crisp. And many famous dishes have interesting stories associated with them. For example, legend has it that a Hangzhou thief invented Beggar’s Chicken. As he had no stove, he wrapped the stolen bird in clay and baked it in a hole in the ground. Another version explains that he was a hungry thief who found a way to cook his bird and keep it and its aroma secret!
