Pingyao Travel Guide
Pingyao is located in the central area of Shanxi Province With an area of 1,260 square kilometers (486.5 square miles), it has five towns and nine villages under its prefecture. Pingyao was not endowed with charming natural scenery but with a group of accomplished businessmen. It played quite an important role in the economic development of Shanxi during the Ming and Qing Dynasties
It is famous for its well-preserved ancient city wall. In November 1986, the city was added to the World Heritage List by UNESCO. The city’s history can be traced back to the Western Zhou Dynasty (11th century B.C.-711 B.C.). The wall is one of the best examples remaining from the Ming Dynasty (1368-1644). The city wall comprises an unbroken rectangle and features a rammed-earth and brick structure extending 6.2 km around the city. It is 10 m high and ranges from 8 to 12 m wide at the base to 2.5 to 6 m at the top.
Pingyao has now become quite a hot tourist attraction even though it is no longer economically prosperous. Today, Pingyao's economic and government center has gradually moved outside the Old City. A residential area and commercial buildings have sprung up around the Old City.

Yellow Millet Wine
Next to the city tower is an ancient-looking shop, named "Changshengyuan," which has been making yellow millet wine and pancakes ever since the Western Han Dynasty of over 2,000 years ago. In fact, its original name was "Jushengyuan." In 1900, when Empress Dowager Cixi, fleeing the foreign-occupied capital to Chang'an, arrived at Pingyao, she was presented with yellow millet wine, pancakes, and beef made by this shop. Greatly pleased with the food, Cixi, as a sign of favor, added the character "Chang," meaning "eternal," to the shop's name, hence its present name. Now it is a must for tourists to drink yellow millet wine, eat pancakes, and watch the wine-making process at Changshengyuan.
Pingyao Beef
Pingyao beef dates from Han Dynasty and was famous in the Ming Dynasty. When the Empress Cixi passed through Pingyao, she tasted Pingyao beef and spoke highly of it. She said, “By smelling it, one can refresh oneself, and by tasting it, one can recover from fatigue.” She praised it as tribute to imperial palace. The famous singer, Guo Lanying, popularized the meat and made it well-known in her folk song, ‘Praise the Specialties,’ in a verse that says ‘Pingyao beef, Taigu pancake…Pingyao is the most famous place.’
Xiaomian Kaolao
"Xiaomian" means buckwheat flour, and "Kaolao" is the wicker basket or a kind of round storage box. Xiaomian Kaolao is a staple food made of buckwheat in Shanxi. The buckwheat batter should be made with boiling water and kneaded until smooth while still hot; the thick batter is cut into small blocks and then rubbed into flat pieces on a smooth stone slab; the flat piece are rolled into a cylinder and placed on end in the steamer. After steaming for about 10 minutes, the delicious Xiaomian Kaolao is ready. It is eaten with some flavoring like tomato or chili sauce. Buckwheat is rich in fat and calories so it is a good dish for people living in cold areas.
